As the days finally (!) start to heat up, there is nothing better than a nice, refreshing cocktail — and Forest H20 at Thyme Bar NYC one to try now. Located just steps from the famed Flatiron Building in NYC, Thyme NYC is a speakeasy in a pre-war cellar featuring a stellar menu of craft cocktails including the Forest H20.

Made with Pātsch, a luxury new tequila that comes in a collectible design worthy bottle to match. It’s a spirit that’s getting a lot of buzz in the both the spirits and design worlds and named after a German expression that means to get hit in all the right ways. There are three expressions – Blanco, Reposado, and Extra Anejo – and, of course, it’s all 100% blue agave. Its signature release, Patsch 7 year Extra Anejo, won the coveted Double Gold medal at the San Francisco Spirits Competition.

The cocktail also blends Greek mastic, yellow chartreuse, and fresh lemon peel, the Forest H20 has a similar flavor profile to a Negroni, but is more perfumey thanks to the sweet, herbal notes of the chartreuse (sweeter than the green variety).

Forest H20 recipe + preparation

  • 1.5 oz. Patsch Blanco Tequila
  • 1 oz. Roots Mastic
  • 1 oz. Yellow Chartreuse
  • Lemon peel squeezed and discarded
  • Serve with a large ice cube
